So my truck has been in the shop for almost 2 months now, and I had the workers hook up the roll bar lights, go through all the wiring, etc.... Tell me what you think, and if I should add 1 more in the middle.

You "could" go with two more, but.... How many amps does your alternator put out?? You may max it out when you really need the light when your off road.
Your front lights on high beam may take 15 amps out of the system, ignition system may take an outher 10amps, am/fm radio takes 3amps, when the off road lights are on, maybe another 20amps? So if the alternator specs at 48amps, your battery with not receive a proper charge. On a long run you may not be able to start the engine the next morning..............Also check the DMV code for how many lights can be "on" at the same time (on road). You may have to cover them if you have four on the roll bar.

The roll bar only has 3 factory slots for lights, so I can only add 1 more. Thanks for the info, and do you think I'll have enough battery charge for 1 more light?

Take the alternator off and take it to a rebuild shop ("not" your local R&R shop or Parts Dealer with a check stand). Have them do a spec check on it. If it's 60 plus amps your right at the minimum for three roll bar lights. Maybe the alt shop can up-grade it for you if it's any less amps than 60.
